Have you got ten minutes? I know that with only a few days left until Christmas you probably don’t have ten minutes to spare, which is okay because these white chocolate dipped apricots only take five minutes to make! Chocolate-dipped dried fruit is one of my favourite easy desserts or edible gifts for the holidays. It’s so tasty, so elegant, and so easy. We spent yesterday afternoon in the hot summer sun splashing around in Casey and Matt’s pool and enjoying a long friend-family Christmas feast. I wore my new red bikini, ate too much homemade ice cream, and soaked in the gratitude of being around people who make my heart happy. It was the perfect start to Christmas and two weeks of holidays. I actually got this idea from a dessert Casey’s crazy talented chef mama made a few years ago. And I make these delights whenever I need a little sweet but slightly healthy nibble for our dessert table or after dinner treats.Image may be NSFW.

I would feel a little guilty for presenting this ‘assembly of ingredients’ as a recipe, but these are so fun and so delicious that I really don’t feel bad at all – and there are so many ways to make this your own! If you aren’t a fan of apricots, this is also really beautiful with dried pears or dried peaches. If white chocolate isn’t your thing try dark or milk chocolate (dark chocolate is sensational with pears) – and mix up the special coatings too! Try almonds, walnuts, pecans, or even sprinkles! Just remember the ratio is about 1 cup dried fruit to 100 grams chocolate and 2/3 cup of coatings – then make your own magic!

These little festive gems take hardly any time to create, and then they just need an hour in the fridge to firm up before you serve them. If you are giving them as gifts simply chill them, package them up and delight your loved ones with a sweet gift. Image may be NSFW.

White Chocolate Dipped Apricots

Gluten free | Makes about 20 apricots – easily multiplied

Ingredients

  • 1 cup dried apricots
  • 100 grams white chocolate, chopped
  • 1/3 cup shredded coconut
  • 1/3 cup chopped pistachios

Method

  1. Line a baking sheet with baking paper and set aside until needed.
  2. Place chopped chocolate in a small heat proof bowl and heat in the microwave in 30 second bursts (stirring well in between) until smooth.
  3. Dip each apricot half to two-thirds of the way into the melted white chocolate, then into either the coconut or the pistachios and then place them on the prepared baking sheet.
  4. When all the apricots are finished place the tray in the refrigerator for at least an hour to firm up.
